{ Sweet Zucchini Relish ~ The Recipe }

I made more of this incredibly yummy relish today.
I mean I had to, I only had 3 pints left in our food storage. 
This relish is so stinking Go-oD!
 I've had several people tell me that they don't like relish.  
But I being the amazing food preserver that I am, persuade them to try just a teensy tiny bit and guess what? 
They...are... hooked...
Yup, it IS that good.

It's seriously easy to make here is the recipe.

Zucchini Relish

12 cups grated zucchini
4 cups grated or chopped onion
¼ cup salt
3 red peppers shredded
1 green pepper shredded

***Mix & let sit in fridge overnight***

Next day rinse and drain.
In a big pot mix the cold vegetables with:
2 ½ cups white vinegar
1 tsp nutmeg
1 tsp turmeric
2 tsp cornstarch
1 tsp black pepper
1 tsp celery seed
4 ½ cups sugar

Cook on med high heat for 30 minutes
Water bath for 10 minutes
Makes 6 pints

BBQ tomorrow night? 
Why yes, I think we will, this is so good on Hamburgers and Hotdogs!

{ Baking In The Morning - Serious Goodness }

Whatever was I thinking??!?! 
My husband wanted fresh hot Cinnamon Rolls to take to his early morning meeting at work. 
So me being the ever good wife that I am made them. 

I started last night and got all the rolls on trays, saran wrapped the suckers and stuck them in the fridge. When the Mister got up this morning he preheated the oven and got them out and rising again. Well, THIS RECIPE doesn't like that (mental note to self) they just weren't the same. So now I have to remake the hummers (one of these days) so I can prove to his Co-Workers that I really can bake. 
Don't get me wrong they are still delicious & yummy but they just didn't have that same Fabulous-ness that they normally do!

But let me just say that this recipe is HANDS DOWN the most:
Yummiest
Lightest
Fluffiest
Most Delicious 
Roll recipe I HAVE EVER HAD!
Just make them all on the same day..... :)

Cinnamon Rolls

Mix and Cool:
 2 C. boiling Water
1/2 C. brown Sugar
1 C. butter or margarine
1/4 C. white sugar
I let this cool in my kitchen aid bowl in my sink filled with a little cold water and I stir it often.

Add in a bowl: 2 Tbsp yeast in 1/2 C. warm water wait until bubbly. 
I add a sprinkle of sugar to help proof the yeast.

After your bowl of "sugar water" is cooled off enough add your yeast mixture to it and then add the following:

2 eggs slightly beaten
1 tsp. baking powder
1 tsp. salt
7 C. flour or more for a soft dough

Mix and cover. 
Let raise.
Carefully put raised dough on Oiled or floured surface. It rolls out fast
& easy when it's raised up.  Roll out to 1/4" thick.  
Brush dough with melted butter, and then sprinkle brown sugar all over it. 
Next sprinkle cinnamon all over dough.  
Roll up tight Cut into 2" rolls.  
Place on a greased cookie sheet. 
 Cover with a towel and let raise really well. 
Bake at 375 degrees for 18 minutes.
Makes 3 dozen rolls

Frosting:
3/4 C. Soft butter
3 C. Powdered sugar
1 Tbsp. Vanilla
Pinch of Salt
1-2 Tbsp. Milk

Mix well with electric mixer it should be thick and creamy.

{ Homemade Laundry Soap }

I know this recipe is used by many of my friends and fellow bloggers, but I have been asked to post the recipe so here you go!

EDITED: Yes, Wal-Mart carries the Fels-Naptha as well as the Super Washing soda.
This is also can be used in any HE washer. 

If your not feeling in the mood to make soap but need a good stain stick:
the Fels Naptha Bar soap is the BEST STAIN STICK EVER.
Just get it wet and rub into any stain. Brinley got chocolate on her new Aeropostale shirt which she informed me of after it had dried, so I just rubbed it with the Fels naptha and it disappeared while I was rubbing it. Amazing stuff.
Oh and I also still use Fabric Softener when I launder my clothes because I just love the stuff.
Liquid Laundry Soap-Family Sized Batch
1 bar grated Fels Naptha soap
5 gallon bucket
1 cup washing soda (Again, Arm and Hammer)
1 cup 20 Mule Team Borax
4 1/2 gallons water
Put grated Fels Naptha in saucepan and cover with water. Heat on low until dissolved. Fill bucket 1/2 way with hot water and add soap. Stir to combine. Add 1 cup washing soda and 1 cup borax and mix well. Fill bucket with more HOT water (I add enough water so it reaches the rings near the top of the bucket) As it cools, it will thicken.
If mixture becomes too thick, add hot water to thin it to desired consistency. May be used immediately. Mix well before each use. Use 1/2(normal) to 1 cup per load (heavy).
Cost per load .04

TIPS:

When mixing the melted soap into the hot water, it's best to add some boiling water to the bucket, it helps break down the lumps better.
I ladle my soap into a used Orange juice container as shown above and just give it a good shake before using.


Liquid Laundry soap- Small batch

3 Pints Water
1/3 bar Fels Naptha Soap, grated
1/2 cup Washing Soda (Arm and Hammer, NOT baking soda though!!)
1/2 cup 20 Mule Team Borax
2 Gallon bucket to mix it in
1 Quart hot water Hot Water
Mix Fels Naptha soap in a saucepan with 3 pints hot water and heat on low until dissolved. Stir in Washing Soda and Borax. Stir until thickened, and remove from heat. Add 1 Quart Hot Water to 2 gallon Bucket. Add soap mixture, and mix well. Fill bucket completely with additional hot water, and mix well. Set aside for 24 hours, or until mixture thickens. You may add additional HOT water if the mixture becomes too thick. Mix Well before each use. Use 1/2 cup of mixture per load. Makes 64 loads. Cost per load .03
 

Powdered Laundry Detergent
1 cup grated Fels Naptha Soap
1/2 cup washing soda
1/2 cup 20 mule team borax
Mix and store in airtight container or bag. For light or small loads, use 1 tablespoon. For normal loads, use 2 tablespoons. For heavy loads, use 3 tablespoons. Cost per load .15


To make a large batch - grate 6 bars of Fels Naptha Soap and then add 3 cups of Washing Soda and 3 cups of 20 Mule Team Borax. Mix well and store in covered container.

TIP: The above recipes will NOT make suds in your washer so don't be alarmed. Fels Naptha Soap is a pure soap and typically makes little or no suds in the water. This makes it perfect for use in the new HE washers as well as traditional washers. You will also notice the need to either reduce your laundry softener or in most cases you can even eliminate the use of softener completely, depending on your preference.

ANOTHER TIP: After this cools down it will be a huge mass o' congealed soap. Get your whisk out and get your hand down in that bucket and whisk, whisk, whisk! You will not be able to get this to be smooth like a store bought liquid. 
BUT
 whisk it enough to put it into another container using a funnel 
(mine is in an old orange juice container). 
When it's in the container  you can shake it up, that will help it break down even further. I usually have to shake it a little everytime I use it.....

{Cookies & Colds}

The cold bug has hit our house and oddly enough it hit a child who doesn't even go to school where you know they breed germs like no man's business. Doesn't she just look pitiful? 
But ya gotta love the mad woman hair.
So after consoling the sick and putting her to bed I decided the next morning I was going to make cookie dough to freeze.
And make them I did.... 190 to be exact!
I used to buy Otis Spunkmeyer at Costco but after a while those got far too spendy for this cheap chick, so I started freezing our own cookie dough. I have been doing this for almost 10 years now and I love it.
I pop a few in the oven before the kids get home from school and by the time the bus drops them off I have a plate of warm yummy cookies waiting for them.


Also on most Sunday's my family likes to make cookies, but I don't like the mess that goes with the making of the cookies so these are my compromise!
We also like to do
this with these cookies as well. YUM-O!

{ A Birthday Party & Recipe Sunday! }

Well the party is over...... It was very low key we had G & G Berry come over along with Aunt Christine and 5 cousins so it was a good time. Mr. Corbin was thrilled with his presents (that cheesy smile melts my ♥)
  He loved his cake even though it looks terrible, seriously don't look too close. I guess that's what I get for staying up so late last night. But then again I never said I could make cakes, I make crafts not cakes! It's supposed to be Thomas coming out of a tunnel and Corbin wanted rocks hence the weird blackish grey blobs. Oh well, he was thrilled with it & that's what matters most right? But next year it's going to be an Ice Cream cake from Dairy Queen.
Okay you can stop laughing now. ;)

We also has some sad news this morning, Lloyd's grandfather passed away last night he will be missed along with his one of a kind sense of humor. The funeral will be this week so it should be a busy week with that and the kids only have school tomorrow and Tuesday and we still have football Mon-Fri so I think we'll be running.

Okay, here's the recipe for today I got if from this BLOG it's SUPER YUMMY & EASY PEASY! Plus it's a crock pot meal so you can't go wrong and while it cooks the house smells OH SO GOOD. 
In fact this is what we are eating Monday night. Yum!
The Ultimate Beef Stroganoff
Recipe & Picture from Mel's Kitchen Cafe.


Put in crock pot: 2-3 pounds stew meat (i use about 1 1/2 pounds)
1 tsp. salt
dash of pepper
1 onion, sliced
Mix in a bowl and pour over meat:
¼ tsp. garlic salt
1 tablespoon Worcestershire sauce
1 ½ cups beef broth or stock (made up from cubes or granules)
1 tablespoon ketchup
Cook in crock pot on low for 7-8 hours or high for 4-5 hours. When cooked make a simple roux by whisking 1/3 cup flour with enough apple juice (about 5-6 tablespoons) to make a thick but still pourable flour mixture. 
Whisk the roux into the crock pot and add 4 ounces sliced mushrooms.
Cook on high for 15-30 minutes. 
Then stir in ½ cup sour cream. 
Serve over pasta, rice or baked potatoes (pasta is my favorite option!).

{ Recipe Sunday- Meat Loaf }

I got this recipe from my friend Shauna a few years back and it quickly became a family favorite. The kids ALWAYS go back for seconds. 
It's quick, easy & very tasty. It's so tasty my oldest daughter always asks for this meal for her birthday dinner.
I do recommend!

Meat Loaf
1 lb. Hamburger (I use low fat)
1 tsp. Salt
1 egg
3/4 cup milk
1/2 cup instant oats
1/2 cup chopped onion
1 cup shredded cheese

Mix together all main ingredients and make into small loaves should make about 6 then pour topping mixture over loaves and bake for 1 hour at 350. YUMMY

Topping:
1 1/2 Tbsp mustard
2/3 cup ketchup
1/4 cup packed brown sugar



Sorry about the lopsided plate, I forgot to put the rolls we had with this meal on the plate. I'm no Martha. Oh and yes the pictures show that I made this recipe a little larger than usual. I wanted leftovers for later.

Vegetable Ham Alfredo Soup

Gasp Another Post!! Can you tell I'm stuck at home?
Today felt like a soup day with all the June snow, rain, and bits of sunshine plus it being a cool 39 degrees outside this meal just seemed to fit the bill. I got the recipe from Sherelle Christensen's blog & have loved it from the get go. It's not the most fit and light of meals (ruined my diet today) but it sure is dang good. My family loves it and if you like Alfredo like any good person should than you will love this soup. Plus it's super simple and I'm all about fast & easy meals with having 5 kids at home.
I had to improvise on a couple of my items, I used whole cut beans not french cut (didn't have any) and cubed carrots (didn't have any diced either) still turned out great! Sorry about the gloomy pic, it's just as gloomy outside. Later!
Vegetable Ham Alfredo Soup
-2 1/2 cups water
-3 Tbs. chicken bouillon
-1Tbs parsley
-salt & pepper
-1 small onion, chopped
-1 cup diced carrots
-2 small potatoes, peeled & diced
-1 cup frozen french cut green beans
-1 cup chopped ham
-1 jar Alfredo Sauce
-1 8oz pkg. cream cheese
-1/2 cup heavy cream
-1/4 cup Parmesan cheese
Bring water, bouillon, salt & pepper and parsley to boil in large pot. Add vegetables & simmer until tender. In a medium saucepan, warm sauce, cream cheese, cream and cheese on medium heat until combined. Add to vegetable mixture and then add in chopped ham. Serve with bread.
Total sidenote: We once again have TV! (see post below) Thanks to my handy husband & my fabulous Father in Law who just so happened to have an extra dish hanging in his shop with nothing to do. Thanks Lloyd I so ♥ you & the kids ♥ you too! Also thanks Don you didn't know you were saving the spare dish for us did you? Gee I hope Lloyd told you that we kinda sorta borrowed it. :)

Easy Chicken Salsa Bake

You only need 3 items for this dish
1 Jar salsa
1 Cup brown sugar
Chicken tenders or breasts (I used about 13 frozen tenders)
Pour Salsa over chicken
Sprinkle brown sugar on top of salsa and chicken.Bake @ 350 for 1 hour 15 minutes.
After it's baked I shred the chicken with 2 forks. Then I it put back in oven for an additonal 10 minutes.Seriously this is the easiest thing to make in the world. And I always have these items in my pantry. I don't make food like Martha S. with her goat cheese and other interesting things that you can never find at a normal persons grocery store.
Anyway, you can eat this just the way it is or you can serve it on a bun and make a sandwich out of it. It's super easy and pretty tasty to my family loves this meal. I just took this to one of my visiting teaching ladies who was sick and her husband caught me at church and told me how much they loved it. You can also use a pork roast instead of chicken and it's just as good. I got this recipe from my mom who in turn got it from a gal in her ward who is known for her cooking skills.
Easy Chicken Salsa Bake
Chicken Tenders
1 bottle Salsa
1 cup brown sugar
Lay chicken in casserole dish or baker (I lightly spray with pam). Pour bottle of salsa over chicken then sprinkle on brown sugar. Bake in preheated 350 degree oven for 1 hr 15 minutes. Take out and shred then bake for additional 10 minutes. Serve alone or on buns. Serves 6-8

{ Chicken Tortellini Soup Recipe }

A friend of mine has been making this Chicken Tortellini soup for some time now and I bought all the ingredients a while ago and I decided that today was the day to make it for my family. 
All I can say is YUM-O! 
This soup was super easy and very tasty. My kids all loved it. I used the refrigerated Buitoni Cheese Tortellini (sooo tasty) but I did add just a little bit extra chicken soup base & some salt and pepper. 
Your taste buds will let you know when to stop adding to the pot. 
Try it for your family, you'll like it. Gees, 
I sound like a freaking commercial.. 

Chicken Tortellini Soup
9 oz bag frozen broccoli
1- 10 3/4 oz can cream of chicken soup
2 cups cubed chicken breast (about 3-4 breasts)
9 oz bag frozen sliced carrots
12 oz package cheese tortellini - fresh, frozen or dry
9 cups chicken broth
1 cup chopped onion
2 cloves minced garlic
1/2 tsp dried basil
1/2 tsp dried oregano

In a large pot combine: cream of chicken soup, chicken, carrots, chicken broth, onion,  basil, oregano. Bring to boil and simmer for 15 minutes. Bring to boil and add tortellini and simmer for 10 minutes. Add broccoli and simmer an additional 10-15 minutes or until broccoli is tender and chicken is cooked through.
Serve garnished with grated parmesan cheese. 
makes 10 1 1/2 cup servings.


Now to figure out what's for dinner tomorrow night? :)

{ Chocolate Sheet Cake }

This is hands down the best Chocolate Sheet Cake I have ever had.

I give all credit to Ree from The Pioneer Woman Cooks. 
I was even asked by Parker if I could make another one as soon as this one was gone. Seriously try it your going to love it! 
This one is going into my book of recipes for sure. 
Well, off I got to finish getting stuff ready, I am "teaching" and I use that term lightly, a Sugar Cookie class this morning for our Enrichment. 

Pioneer Woman Chocolate Sheet Cake


Combine in a mixing bowl:
2 cups flour
2 cups sugar
1/4 teaspoon salt

In a saucepan, melt:
2 sticks butter
Add 4 heaping tablespoons cocoa. Stir together.
Add 1 cup boiling water,
allow mixture to boil for 30 seconds, then turn off heat.
Pour over flour mixture, and stir lightly to cool.
In measuring cup,

pour 1/2 cup buttermilk.
Add:2 beaten eggs
1 teaspoon baking soda
1 teaspoon vanilla
Stir buttermilk mixture into butter/chocolate mixture.
Pour into sheet cake pan and bake at 350-degrees for 20 minutes.

While cake is baking, make icing:
Chop 1/2 cup pecans finely.
Melt 1 3/4 sticks butter in a saucepan.
Add 4 heaping tablespoons cocoa, stir to combine, then turn off heat.
Add:6 tablespoons milk
1 teaspoon vanilla
1 lb minus 1/2 cup powdered sugar
Stir together. Add pecans, stir together, and pour over warm cake.
Cut into squares, take your insulin, and eat. 

You, my friend have just made the best chocolate sheet cake. 
Ever.

{ Baked Alfedo SO YUMMY! }

This is SO DARN GOOD! 
I have been making if for a while and I made it for my parents when they were here for Christmas and they loved it. We had it for dinner tonight and I told my friend Gail I would post it. If you love Alfredo you will LOVE this. If only I had some Olive Garden Bread sticks to go with it......

Alfredo Pasta Bake

Ingredients:

8 oz pasta, cooked and drained
2 cups broccoli florets
1 cup mushrooms
1.5 cups chicken, cooked and shredded or diced
1 jar alfredo sauce
2 cloves garlic, minced
1/2 cup mozzarella cheese
1/2 cup Parmesan cheese
2 Tbls butter

Directions:- Preheat oven to 350 degrees- Coat the bottom of the two small or one medium baking dish with a thin layer of alfredo sauce. In a medium bowl, mix the pasta, broccoli, mushrooms, chicken, garlic and alfredo sauce until combined. Place mixture into baking dish and top with mozzarella and Parmesan cheese. Cut the butter into small pieces and scatter on top of the cheese. Bake for 20 minutes or until cheese is hot and bubbly.

Rachel's notes: I like to use Classico Four Cheese Alfredo Sauce. Also when I bake it after the 20 minutes, I turn on the broiler for a few minutes just to brown the cheese, just don't burn it. Burn=no good.

I also don't follow this recipe to the "T". If I think it needs a little more of this or that I add it. Just don't use too many noodles. I usually don't use the whole package of refrigerated noodles if you use too many noodles add more sauce otherwise it won't be very moist.

{ Amish White Bread Recipe }

That's right folks, I make bread. Me, myself, I, Rachel - & it's none of that bread machine stuff. I've been making this bread for about 2 weeks now and it actually comes out so yummy every time.
And that is a miracle in and of itself because the last time I made bread was way back in High School & it didn't turn out (my dad called it toast bread) so I decided that maybe yeast & me just don't work well together.
I know some of you may be saying so, what's the big deal I make bread all the time. Well to me having bread actually turn out & taste good.
Can I get a hallelujah here! ;)

Amish White Bread
2 cups warm water
2/3 cup white sugar
1 1/2 tablespoons active dry yeast
1 1/2 teaspoons salt
1/4 cup vegetable oil
6 cups bread flour


In a large bowl, dissolve the sugar in warm water, and then stir in yeast.
Allow to proof until yeast resembles a creamy foam. Mix salt and oil into the yeast.
Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat.
Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour. Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans. Bake at 350 degrees for 30 minutes.

Edited to Add: I mix in all my flour and then leave it in my Kitchen Aid and let it beat the crap out of it for 8 minutes, then I take it out and hand knead it for 2 more minutes on a lightly floured surface. 

Then, let it do the whole rise thing.

{Cookies Cookies Cookies}

These are the best Chocolate Chip Cookies ever
(at least we think so) they are soft & chewy and taste delish!

Rachel Berry's Chocolate Chip Cookies
1 cup shortening
1 cup butter
2 cups packed brown sugar
1 cup sugar
4 eggs
2 tsp vanilla
2 tsp baking soda
2 tsp salt
5 cups flour
1 pack chocolate chips
Combine all wet ingredients in Kitchen Aid and mix well.
Add dry ingredients and chocolate chips.
Bake at 350 for about 8-10 minutes.
This recipe makes a large batch o' cookies.

I use my small pampered chef ice cream scoop to put the cookies on the cookie sheet (but I don't level off the dough hope that makes sense). They make the perfect size cookie not too big - not too small.
We pull these out of the oven when they are lightly browned around the bottom of the cookie. And since every oven bakes different you may have to bake a little less or more. Just keep an eye on them cause even slightly over baking them will make them way too crunchy.

I also freeze these as well and they are still just as good. Just pop them on a cookie sheet and freeze them. Then after they are frozen throw them in a plastic freezer bag and your good to go!

{ DRUM ROLL PLEASE!! 100th Post! }

It's my 100th post and all you get is this recipe!
Actually this is really, really good. It's called Pizza Spaghetti, and my family now likes it better than regular spaghetti. The kids had second helpings of this stuff.
It's super easy and totally delish..
I got the recipe from this blog.

Pizza Spaghetti
12 oz spaghetti, cooked al dente
1 lb Italian sausage
2 oz sliced pepperoni
26 oz jar pasta sauce
1/4 c grated Parmesan cheese
8 oz mozzarella cheese, shredded
4 oz cheddar cheese, shredded

Place cooked spaghetti in a 13 x 9 casserole dish.
Cook sausage in a skillet for 5-7 minutes, or until cooked through. Crumble. Pour pasta sauce over the noodles.
Spoon sausage and pepperoni over the sauce.
Sprinkle cheese evenly over the pepperoni/sausage combo
Cover with aluminum foil and bake at 350 degrees for 30 minutes.
Remove foil and place back into oven for an addition 5-8 minutes, or until cheese is melted.
I was told this picture made the food look interesting... It's just the cheese baked on top of the noodles. Really it is very good.

{ No-Bake Cookies }



I know 2 posts today! I am on a roll. But I figured I would put on my "good mom hat" and make the kids a snack for after school. Plus this recipe was requested by a friend so here ya go.
These are so good. I have a couple friends that don't like No-Bake Cookies but they do like these. They are worth the 10 minutes to make them.
And you don't have to use an oven, there's a plus for me. :) Enjoy!

No-Bake Cookies

2 cups sugar
1/2 cup milk
1/2 cup margarine (I use butter)
1/4 cup cocoa
1/2 cup peanut butter (creamy)
1 tsp. vanilla
2 3/4 cups oatmeal (I put in 3 cups)
1/2 cup coconut (I don't add)
~~~~~~~~~~~~~~~
Over medium heat mix together: sugar, milk, butter, & cocoa. Cook until well blended, DO NOT LET BOIL. Remove from heat and add peanut butter, vanilla, oatmeal & coconut. Mix well. Spoon onto wax paper & chill. Tasty-O!

{ Best Ever Farmhouse Sugar Cookies }

The baby was craving Sugar Cookies, so I decided to be a good mom and make her some! 
I woke up on Sunday afternoon after my nice little nap and was totally craving these sugar cookies. This recipe comes from my best friend's mom's kitchen, I have been using this recipe FOREVER!
These are so yummy! This recipe makes moist, soft cookies that keep really well in a zip lock bag. I know they are not frosted all pretty and professional like, but when your craving something while pregnant you do what you have to do. And fast!
I think these are yummy and worth passing on.
P.S. This recipe make a large amount of dough 1 batch does our family of 6 just fine we always have lots left over.



Best Ever Farm House Sugar Cookies
  • 1 cup shortening
  • 2 cups sugar
  • 2 eggs
  • 1 cup sour cream
  • 1 tsp vanilla
  • 4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 4 1/2-5 cups flour
Cream together shortening & sugar. Add eggs 1 at a time, continue to beat. Add sour cream & vanilla, then sift together dry ingredients. Add both mixtures together and roll out to about 1/4" thick cut into shapes and bake at 350 for 10 minutes Should be soft and light colored. Cool and frost after baking.
I use the following frosting recipe it's my sister- in -laws and my family loves it. I never buy canned frosting yuck!

Lisa's Frosting:
  • 3/4 cup shortening - Crisco only
  • 1 stick butter softened
  • 1/4 cup milk
  • 1 lb powdered sugar
  • 1 tsp vanilla
  • 1 tsp lemon or almond extract
  • food coloring if desired
Mix all together in mixer and beat till fluffy. I beat for about 5+ minutes on high in my Kitchen Aid makes it really fluffy. Stores well in seal tight container in refrigerator. I never said this was the healthiest recipe around. But come on ladies--These are frosted sugar cookies YUM-O!
